There is no better curry in the world than a Korma cooked right.
‘Korma probably derived from the Persian Koresh, a ghee-based mild stew the Mughals indianised using cream, yogurt, ground almonds, saffron and aromatic spices.
Ingredients Of OK Korma Masala:
- Coriander Seeds
- Red Chilli
- Will Cayenne Pepper
- Salt
- Cumin White
- Fennel Seeds
- Black Pepper
- Nutmeg
- Black Cumin
- Star Anise
- Ginger Powder
- Garlic Powder
- Clove
- Cinnamon
- Green Cardamom
- Bay Leaf
- Black Cardamom
- Mace
- Turmeric
Ingredients Required:
Ingredients | Quantity |
Meat | 1 kg (Beef/Chicken/Lamb/Mutton) |
Onions | 3 medium finely sliced |
Yogurt | 1 ½ cup |
Ginger | ¼ cup julienne |
Cooking Oil/Ghee | 1 cup |
Method:
- Heat oil, fry onions until golden brown, drain onions and set aside.
- In the same oil, add meat, yogurt and OK Korma Masala. Cover and cook on low heat for 20-30 minutes.
- Add 1 ½ cup water for gravy and julienne ginger. Cover and cook on low heat until meat is tender.
- Add fried & crushed onion and mix well,bring it to boil,cover and cook for 2-3 minutes.
- Now cook on high flame for 2-3 minutes.
- Add garam masala powder,butter,kewra water and mix well.
- Garnish with almonds and ginger.
Tip: For crispy onion evenly spread on paper towel to remove excess oil & Let it completely cooled.
