Karahi is a very favorite and most cooked dish in our desi cuisines specially in Dawats. Chicken mutton and beef is used in it as per one’s choice. But a smart and delicious variation in it is here for you. A dum with the Coal/Koyla enhances the flavor of the Karahi and the aroma is simply irresistible. This is definitely going to be one of the best dishes on your dastarkhawan. Ingredients:
- Salt
- Black Pepper
- Chaat Masala
- Cumin White
- Coriander Seeds
- Paprika
- Red Chilli
- Ginger
- Garlic
- Coriander Leaves Flakes
- Kasoori Methi
- Green Chilli
Ingredients Required:
Yogurt 2 tbsp
Tomatoes 9 medium
Cooking Oil 1 cup
Method:
- Mix yogurt and OK Koyla Karahi Masala, apply to meat and marinate for (Chicken 30 minutes, Boiled Goat/ Lamb/ Beef 1-2 hours or overnight).
- Steam tomatoes in 1 cup of water. Now peel off tomatoes and make a paste.
- Heat oil and add marinated meat, fry until water dries. Now add tomato paste and cook for 10 minutes then slow down flame, cover and cook for 5 minutes.
- Separately heat Coal (Koyla) on medium flame. Now fry properly until oil separates from gravy.
- Put 1 clove and 1 cardamom in an aluminium foil cup and place the heated coal on it. Place this cup in karahi and sprinkle a little amount of oil on coal and cover it immediately. Let the dum sit in for atleast 5 to 7 minutes so that the aroma penetrates the dish properly.
- Garnish with garnishing masala and serve with hot naan.
