Shahi Aloo Gosht Masala

Aloo Gosht is a dish which is prepared with meat and potatoes both. It usually has lamb or mutton or beef meat, in a stew-like gravy which is known as shorba. The dish can be served and eaten with plain rice or with bread such as roti, paratha or naan. It is a favorite and common dish in Pakistani meals and is commonly consumed. A couple of years back Aloo gosht used to be the main course dish in wedding events but with the variations in cuisines it has been limited to regular dishes only.

Ingredients Of Shahi Aloo Gosht:

1. Coriander Seeds
2. Red Chillies
3. Cashew
4. Cumin White
5. Black Pepper
6. Black Cardamom
7. Nutmeg
8. Cinnamon
9. Green Cardamom
10. Mace
11. Cloves
12. Onion Powder
13. Ginger Powder
14. Garlic Powder
15. Turmeric
16. Will Cayenne Pepper
17. Bay Leaf

Ingredients Required:

Ingredients	Quantity
Meat	1 Kg
Yogurt	4 tbsp
Onion	2 medium (paste)
Tomato	3 medium (paste)
Potato	3 medium (peeled & cubed)
Green Chillies	3 medium
Fresh Coriander Leaves	½ cup chopped
Cooking Oil	1 cup

 

Method:

 

1. In hot oil add onion paste and fry until golden brown. Add meat, tomato paste and OK Aloo Gosht Masala, cook for 5 to 10 minutes.
2. Add 2 to 3 cups of water (for beef/mutton/lamb) and ½ cup of water for chicken)
3. Cover and cook on medium heat until meat is tender (45 minutes for beef/mutton/lamb and 7 – 8 minutes for chicken).
4. Add yogurt and cook well until oil separates from gravy.
5. Now add potatoes and saute again for 1 to 2 minutes. Add required amount of water to prepare gravy. Cover and cook on low flame for 15 to 20 minutes or until the potatoes are cooked properly.
6. Add coriander leaves and green chillies for garnishing.
7. Serve with naan or chapati.

تازہ دھنیا                      آدھا کپ کٹا ہوا

کھانے کا تیل                  ایک کپ

 

:ترکیب

گرم تیل میں پیاز کا پیسٹ شامل کریں اور سنہرا ہونے تک تلیں. گوشت، ٹماٹر کا پیسٹ اور آلو گوشت مصالحہ شامل کریں، پانچ سے دس منٹ تک پکایں.

دو سے تین کپ پانی شامل کریں (گاۓ، بکرا، دنبہ) کے لئے اور آدھا کپ مرغی کے لئے.

ڈھک کر درمیانی آنچ پر گوشت گل جانے تک پکایں (پینتالیس منٹ گاۓ، بکرا، دنبہ کے لئے اور پندرہ منٹ مرغی کے لئے).

اب دہی شامل کر کے اچھی طرح بھونیں .

اب آلو شامل کر کے دوبارہ ایک سے دو منٹ ک لئے بھونیں. سالن تیار کرنے کے لئے حسب ضرورت پانی شامل کریں. ڈھک کر ہلکی آنچ پر پندرہ سے بیس منٹ کے لئے پکایں.

تازہ دھنیا اور ہری مرچیں سجاوٹ کے لئے شامل کریں.

 نان اور چپاتی کے ساتھ پیش کریں.
